2 cup full-fat doodh
1 chammach elaichi powder
1/4 cup kata hua pistachios
1/4 cup kata hua badam
1/4 cup kata hua kaju
1/4 chammach kesar
2 bade chammach gulab jal

Khoya Kulfi Banane Ki Vidhi:

1…Ek bade pan mein khoya ko medium aanch par garam karein jab tak yeh melt na ho jaaye aur naram na ho jaaye. Khoya ko chipka nahin hone dena hai, isliye turant turant chalate rahein.

2…Jab khoya naram aur mulayam ho jaaye, chini daalein aur achchi tarah se mix karein. Chalte rahein jab tak chini poori tarah ghul na jaaye aur mishran gaadha aur creami na ho jaaye.

3…Ek aur pan mein doodh ko medium aanch par garam karein jab tak yeh ubal na aane lage. Aanch ko halka karein aur 5-10 minute tak pakayein, kabhi-kabhi hilate rahein.

4…Doodh mein elaichi powder, kesar aur kata hua mewa daalein aur achchi tarah se mix karein. Aur 5 minute tak pakayein.

5…Doodh mein khoya-chini ka mishran daal dein aur achchi tarah se mix karein. Aur 5 minute tak pakayein.

6…Ab ismein gulab jal daal dein aur phir se mix karein. Doodh ka gas band kar dein aur isse thanda hone ke liye rakh dein.

7…Jab doodh thanda ho jaaye to isse kulfi molds ya chote mitti ke bartan mein daalein. Kulfi molds mein mix dalte samay kuch pistachios ya badam daal sakte hain.

8…Kulfi molds ko freezer mein rakh dein aur unmein sticks daal dein. Kuch ghante ke liye rakhne ke baad, khoya kulfi taiyaar hai.
